While everyone else is sweating in line for a new cheese curd concoction, you should be making a beeline for the Agriculture Horticulture Building. Why? Because that’s where the magic happens. If you've never seen it, prepare to be amazed. It's exactly what it sounds like, but also so much *more*. I saw a massive portrait of a loon wearing tiny sunglasses, made entirely of wild rice and black beans. The caption? "*Cool as a Minnesota Summer*." Classic! There was another one that was just a giant Hotdish, but each ingredient was depicted with a different seed. The tater tots were made of puffed wheat! I literally snorted with laughter.
And then there was the piece, obviously a crowd favorite, showing a tiny Gopher mascot trying to wrangle a giant mosquito, with the caption "*The Real State Bird*." So funny, and so *true* this August! The level of detail on the mosquito's wings, all crafted from different shades of barley, was mind-blowing.

Getting into the Minnesota State Fair definitely has a cost (check their site for daily admission prices!), but once you're inside, viewing the crop art is totally *free*. And it's one of the best ways to spend an hour or two escaping the crowds and the heat. The Agriculture Horticulture Building is pretty central, near the Grandstand and the Dairy Building. Just follow the signs! You can't miss it.
